Just the right amount of rosemary along with the smooth olive oil rub accentuates the elegance, power, and versatility of the rustic and buttery Sartori Rosemary & Olive Oil Asiago.

Food

Enjoy as either a hors d’oeuvres or after-dinner cheese course by pairing this cheese with water crackers spread lightly with orange marmalade and green or black (or assorted) olives alongside.

Likewise, whether it’s before or after dinner, you can enjoy the cheese with ripe pear slices and lightly toasted hazelnuts.

Beverages

Beer:
  • Moretti – As the saying goes, “what grows together goes together,” and this Italian beer, made close to the area where Italian Asiago is made, is a natural companion to the cheese. It complements the rosemary in the cheese especially.
  • Porter – Although completely different from the Moretti, the dark Porter is a spectacular foil for the mint-like quality of the rosemary and the sharp/sweet characteristics of the cheese.
  • IPA – This style of beer is bitter by design. The Rosemary-Rubbed Asiago really brings out the special “grapefruit peel” quality that’s inherent in this beer to make a very edgy pairing.
Wine:
  • Tocai Friulano – This wine is made in the region next door to the area where Italian Asiago is made, which is the Veneto. Tasting the cheese and wine together, though, makes it seem as if they come from the same place. The wine, which has notes of bitter almonds and a slightly licorice-like flavor, plays off the rosemary in the cheese beautifully.
  • Valpolicella – Also in the Veneto is the place where Valpolicella is made. Once again, the regional affinity makes for a great cheese and wine pair owing to the wine’s assertiveness yet relatively soft tannins, and the cheese’s robust yet balanced flavors.
