For a true Italian trattoria experience, serve this wine-rubbed cheese with toasted walnuts and thin prosciutto slices. Try it with wedges of fresh fennel and cut, dried figs.

Beverages
Beer:
- Hefeweizen – This beer, which is a bit yeasty and slightly tropical, becomes much edgier in the presence of the full-flavored cheese. This is not an intuitive pairing and therefore a wonderful surprise.
- Pilsner – Czech Style – This medium-bodied not-too-bitter and slightly floral beer works surprisingly well with the wine-washed cheese because of the cheese’s unique balance of sweet and savory.
Wine:
- Merlot – The combination of Merlot wine and a Merlot-washed cheese is a no-brainer, although it’s best to have a medium-bodied merlot. A big, oaky Merlot with a lot of tannin will become bitter in the presence of this fruity cheese.
- Pinot Noir – Even though Pinot Noir is a lighter wine than Merlot, it still works with the cheese because of its earthy yet fruity qualities. These are the same characteristics found in the cheese.
- Sherry (Oloroso) – The nutty, caramel-like fortified wine surprisingly accentuates the Merlot characteristics of the cheese to create a pleasant tension between the two.
