Flavors of melted butter dominate this slightly granular cheese, and a hint of salt and honey nuances create a memorable finish.

Food

This cheese pairs beautifully with dried Italian salami as a hors d’oeuvres and goes equally well with the combination of ripe peaches and Italian amaretti cookies. Or, for a simple and memorable dessert, serve BellaVitano Gold with a small bowl of honey and a big spoon alongside.

Beverages

Beer:
  • Classic Pilsner – Talk about a classic pair -- this is it. The cheese is on the sweet side, and the relative lack of bitterness in the beer makes sure that the cheese’s sweetness shines through and yet stays in balance with the other flavors and textures in the cheese.
  • Guinness® Stout – A surprisingly good match because of the contrast between the bold and slightly bitter beer and the sweet cheese. The combination mirrors a well-known pub beverage called a Black and Tan, which is Guinness and a pale ale or sometimes a lager. The end result is sweet, spicy, and a tad bit bitter.
Wine:
  • Lightly-oaked Chardonnay – The chardonnay grape is lovely with the sweet, rounded BellaVitano Gold largely because of the textural similarities between the full-bodied wine and cheese. Too much oak would be too strong – the cheese exaggerates the oak – but a light touch makes for a nice companion with the cheese.
  • Dry Riesling – The sweetness and salt in the cheese plays off the fruity wine to create a kind of yin-yang in the mouth. Delicious!
  • Pinot Noir –American Pinot Noir has plenty of fruit to stand up to the fruitiness of the cheese and makes for a lovely marriage of the two.
  • Sauternes – This most prized dessert wine turns out to be a great companion for the BellaVitano Gold. The sweetness of the wine and the cheese harmonize beautifully to create the ideal dessert.
